Sear meatballs
Remove, cook bacon until crispy, remove
Cook mushrooms until browned, add remaining veg and cook 4 minutes
Add butter and garlic, cook 1 more minute
Add flour, stir and cook 2 minutes
Add wine & cognac, stir and cook until thickened
Add stock, thyme, S&P
Bring to boil, add meatballs. Cover and simmer for 2 hrs
Add chopped parsley, stir, serve over mashed potato
