Coq Au Vin Meatballs
  1. Sear meatballs

  2. Remove, cook bacon until crispy, remove

  3. Cook mushrooms until browned, add remaining veg and cook 4 minutes

  4. Add butter and garlic, cook 1 more minute

  5. Add flour, stir and cook 2 minutes

  6. Add wine & cognac, stir and cook until thickened

  7. Add stock, thyme, S&P

  8. Bring to boil, add meatballs. Cover and simmer for 2 hrs

  9. Add chopped parsley, stir, serve over mashed potato
