Preheat oven to 425F and put your cast iron pan in the oven at the same time to heat up.
In a mixing bowl, whisk together eggs, flours, and milk until well combined and no lumps remain.
Season with spice, salt and pepper and mix again.
Remove cast iron skillet from the oven and pour in 4 tbsp olive oil, then your batter. It will begin to sizzle.
Put the skillet back in the oven and bake for 19-22 minutes, until golden brown.
If enjoying plain, sprinkle with coarse salt, cut and it is ready to eat!
If topping like a pizza, sprinkle grated cheese while flatbread is still hot and top as desired.
