Cook your meat of choice and set aside
Spray a foil lined sheet pan with oil then lay on your corn tortillas
Add meat and top with shredded cheese
Bake in a 425°F oven for 2 minutes until cheese has just melted
Fold tortillas in half and return to oven for 12 more minutes or until tortillas are crispy
Serve with salsa and sour cream
Garnish with cilantro and enjoy
