Add everything to the slow cooker, starting with the chicken on the bottom. Be sure to mix the seasonings together before adding over the chicken in the slow cooker. Pour salsa, paste and chipotle in and top with the chopped peppers.
Cover the slow cooker and cook on high for 3 hours. If cooking on low, cook for 4 hours. Be sure to check the chicken with a digital thermometer to prevent overcooking the chicken.
Once chicken is cooked through, pull it out and place on a cutting board. Shred the chicken well with two forks and place it back into the slow cooker with the sauce. Mix everything up again to bring the chicken back to heat.
Assemble the tacos and add all your favorite toppings (shredded cheese, onions, sour cream, avocado, cilantro whatever you like!)
