    ORANGE ALMOND GLAZE

  1. Preheat the oven to 375. Grease & flour 1 bundt pan.

  2. Melt & cool butter.

  3. In a large bowl, beat sugar, salt, eggs, and orange zest on high speed until thick & pale yellow (approx 4 min.)

  4. Sift flour & baking powder over the top & fold in. Then stir in the melted butter & heavy cream.

  5. Scrape the batter into the pan & spread evenly. Bake until a toothpick inserted into the center comes out clean. Approximately 40 minutes.

  6. Let the cake cool in the pan for 10 minutes before using a knife to scrape around the edges & loosen the cake. Allow to cool completely.

  7. While cake cools, make glaze. Stir all ingredients briskly. The glaze will harden quickly.

  8. Puncture with a wooden skewer & spoon rum all over the top. Liberally add glaze over the top.
