CAKE
ORANGE ALMOND GLAZE
Preheat the oven to 375. Grease & flour 1 bundt pan.
Melt & cool butter.
In a large bowl, beat sugar, salt, eggs, and orange zest on high speed until thick & pale yellow (approx 4 min.)
Sift flour & baking powder over the top & fold in. Then stir in the melted butter & heavy cream.
Scrape the batter into the pan & spread evenly. Bake until a toothpick inserted into the center comes out clean. Approximately 40 minutes.
Let the cake cool in the pan for 10 minutes before using a knife to scrape around the edges & loosen the cake. Allow to cool completely.
While cake cools, make glaze. Stir all ingredients briskly. The glaze will harden quickly.
Puncture with a wooden skewer & spoon rum all over the top. Liberally add glaze over the top.
