In a medium-sized bowl, combine the Cool Whip and protein powder. Mix thoroughly until the filling is smooth and well-incorporated.
Remove the graham crackers from the freezer. Spoon the protein filling onto the chocolate-covered crackesr. Gently top with a plain graham cracker, pressing lightly to form a sandwich.
If desired, dip one edge or corner of the assembled s’mores into more melted chocolate for an extra decorative touch.
Return the assembled s’mores to the parchment-lined baking sheet and place them in the freezer for at least 1 hour, or until firm.
