Season and sear the meat.
Lightly fry the chiles for about 30 seconds and place them in hot water to soften them.
Save some of the water because you'll need it to make the sauce.
Blend all the ingredients with the softened chiles.
Pass the blended mixture through a strainer.
Place the meat in the pot and pour the sauce over the meat, ensuring all the meat is coated.
Place 2 bay leaves inside.
Press the Meat/Stew button and pressure cook for 35 mins.
Natural release for 20 mins.
