Combine 250g pork mince and 250g green prawn meat in a bowl
Add finely chopped spring onion whites, garlic cloves, and ginger
Mix in 2 tbsp soy sauce, 2 tbsp Chinese cooking wine, 2 tsp sugar, 1 tsp stock powder, ½ tsp white pepper, and ½ tsp sesame oil
Season with salt to taste
Place filling in the center of each gyoza wrapper
Fold and seal the gyoza wrappers
Heat avocado oil in a pan and cook gyoza until golden
Prepare dipping sauce by combining 2 tbsp soy sauce, 1 tbsp rice wine vinegar, 1-2 tsp sugar, and 1-2 tsp chilli oil
Adjust dipping sauce measurements to your liking
Garnish gyoza with sliced spring onion greens
Serve with dipping sauce
