Honey Glazed Salmon with Roasted Vegetables
  1. Preheat the oven to 200°C (400°F).

  2. In a small bowl, whisk together honey, Dijon mustard, lemon juice, and minced garlic to make the glaze.

  3. Place salmon fillets in an oven tray. Brush the glaze over the salmon.

  4. Toss assorted vegetables with olive oil, garlic, oregano, salt and pepper in another oven tray.

  5. Roast the vegetables in the preheated oven for about 20 minutes.

  6. Lower temperature to 160°C and put the salmon in the oven (with the vegetables) for 10-15 minutes.
