    Dry Rub

  1. Mix dry rub

  2. Mix salt and water until salt is dissolved

  3. Add remaining ingredients to brine

  4. Cover pork in brine and chill for 12 hours

  5. Pat dry pork with paper towels

  6. Rub pork with rub

  7. Cook low and slow at 225°F for 12 hours until internal temp reaches 200°F

  8. Pull apart after pork cools slightly (170ºF)
