Roast Brussels Sprouts
  1. Preheat your oven to 190°C/Fan 170°C/Gas 5. Trim the bases off the Brussels sprouts and peel off any ragged outer leaves. Halve any really large Brussels sprouts.

  2. Tip all the Brussels into a roasting tin or dish. Drizzle over a little olive oil and season with salt and pepper. Toss to coat in the oil and seasoning. Roast for 20-25 mins till lightly browned and cooked through, but still with plenty of bite. Serve straight away.

  3. Add Extra Flavour

  4. Toss your sprouts in a spice mix before roasting for an extra layer of flavour. Try a spoonful of mixed herbs, then add a squeeze of lemon juice and a pinch of freshly grated zest just before serving. Add a generous pinch of vegetable curry powder, Jamaican jerk seasoning or fajita seasoning if you'd like to add some chilli heat.
