Cook bacon in a pan or in a 400F oven for 19 minutes. Drain on paper towel.
Hard-boil the eggs in boiling water for 9 minutes, then add to an ice bath until cool. Peel under cold running water.
Now, lets chop everything up! Onto a cutting board, add a large handful of lettuce, hard-boiled eggs, shallot/onion, ½ avocado, a couple of cherry tomatoes, pickles, bacon, mustard, hot sauce, mayo, S&P, and garlic powder. Reserve the rest of the avocado for future servings (which will prevent avo from oxidizing).
Chop everything with a knife. If you like it on the chunkier side, chop less. If you like it on the creamier side of things, keep chopping.
Pop these onto romaine lettuce leaves (toasted bread, tortilla, or bell pepper also work, or you could scoop with crackers), then top with everything bagel seasoning and some crushed up crispy bacon.
