Preheat oven to 150C.
Spread the pistachios over a baking tray and roast in the oven for 5 - 10 minutes then allow them to cool for 5 minutes.
Melt the white chocolate and leave aside.
Add them to a high speed blender or food processor and blend until a pistachio butter starts to form.
Add the melted white chocolate to the blender and continue to blend for a couple of minutes until it gets super smooth.
Transfer to a jar and serve with your fave sweet treats!
