Cut each chicken breast lengthwise down the center, but stop before cutting all the way through to form a large pocket.
Fill these pockets evenly with slices of cheese and jalapeno pieces, then use a spoon to add the lightly crushed blackberries.
Use toothpicks if necessary to keep all the fillings secure.
Warm your choice of oil in a large skillet that can go in the oven, over medium heat, and sear the chicken until each side is a lovely golden brown, approximately 4 minutes per side.
Pour the chicken bone broth into the skillet to deglaze and enhance the flavor, then place the skillet in the preheated oven.
Cook in the oven for 12-15 minutes, or until the chicken reaches an internal temperature of 165°F (73.9°C) as checked with a food thermometer.
Sprinkle freshly chopped parsley or basil on top before serving.
