Scrub pineapple skins very well
Add skins to a quart sized mason jar
Add sugar and spices to the jar
Cover with water until skins are fully submerged
Cover loosely with pickle jar lids to allow air to escape
Ferment at room temperature for 24-72 hours (approximately 48 hours is ideal)
Watch for a steady stream of bubbles from bottom to top to indicate active fermentation
Transfer to swing top bottles to trap carbonation for a bubbly soda, or drink as is
Serve chilled
