Blackberry Lilac Ginger Bug Soda
  1. In a pot on medium heat, combine blackberries, lilac blossoms and 2 cups of water.

  2. Lightly mash the blackberries and steep for 20-30 minutes.

  3. Strain into a clean jar or glass bowl.

  4. Allow to cool and add the honey.

  5. Pour the contents into a pressure safe flip top bottle using a funnel.

  6. Add the remaining 2 cups of water along with the ginger bug.

  7. Leave 1 inch of headspace.

  8. Seal the bottle and let it sit on the counter at room temperature for 2-4 days. (Fermenting times may vary).

  9. Burp the bottle daily to release pressure.

  10. Refrigerate and enjoy chilled.
