In a pot on medium heat, combine blackberries, lilac blossoms and 2 cups of water.
Lightly mash the blackberries and steep for 20-30 minutes.
Strain into a clean jar or glass bowl.
Allow to cool and add the honey.
Pour the contents into a pressure safe flip top bottle using a funnel.
Add the remaining 2 cups of water along with the ginger bug.
Leave 1 inch of headspace.
Seal the bottle and let it sit on the counter at room temperature for 2-4 days. (Fermenting times may vary).
Burp the bottle daily to release pressure.
Refrigerate and enjoy chilled.
