  1. Remove the filling from the artisanal sausages.

  2. Sauté the green, yellow, and red bell peppers and red onion, then add the sausage filling and cook for 10 minutes over medium heat.

  3. Turn off the heat, add the chopped green onions, and let it cool.

  4. Once cooled, add the shredded cheese of your choice.

  5. Place the filling generously on the center of a large tortilla, cover with a smaller tortilla, brush the edges and the smaller tortilla with egg, and carefully seal the edges to form the false choripán.

  6. Brush the top with more egg.

  7. Place the tortillas upside down on the grill. Cook on both sides until well browned.
