Chocolate Candied Orange Peel Sour Cream Muffins
  1. Preheat oven to GM4/ 180°C/ 350F.

  2. Cream the butter and sugar until soft about 3 to 5 minutes.

  3. Add in the vanilla.

  4. Add in the eggs one at a time and mix until each is incorporated.

  5. In a separate, mix together the flour, baking soda, and baking powder.

  6. Add the flour mixture and the sour cream alternately to the egg-butter mixture in the additions.

  7. Start with the flour and end with the flour.

  8. Scrape the bowl occasionally.

  9. Fold the chocolate chips and candied orange peel into the batter.

  10. Portion the muffin batter into greased tins (I use an ice cream scoop).

  11. Depending on the size of your tins, you should get about 14 to 16 muffins.

  12. Bake them for approx. 22-24 minutes until they are golden brown and spring back when touched.
