  1. Fry onion, deglaze with white whine - reduce

  2. preheat blender with hot water

  3. remove water, dry blender, blend yolks,

  4. gradually add hot (!) white wine/onion mixture, wait for color change

  5. slowly add spoonfuls of butter

  6. blend longer, till consistency reached
