Simmered Chicken With Shiitake, Goji & Kombu
  1. Sauté white parts of green onion, then ginger and garlic.

  2. Add mushrooms and sauté until fragrant. Pour in dashi and soy sauce.

  3. Nestle in chicken thighs, add kombu, goji berries, and pepper.

  4. Cover and simmer for 15–20 min, until chicken is tender.

  5. Top with green onion greens before serving.
