Mango Habanero Chicken Skewers
  1. Mango Habanero Sauce: In a blender or food processor, combine the diced mango, habanero peppers, olive oil, honey, lime juice, minced garlic, smoked paprika, cumin, salt, and pepper. Blend until smooth and slightly thick.

  2. Marinate the Chicken: Place the chicken cubes in a bowl or resealable bag. Pour half of the mango habanero sauce over the chicken and mix well to coat. Cover and refrigerate for at least 1 hour to absorb the flavors. Reserve the remaining sauce for basting.

  3. Prepare the Skewers: Thread the marinated chicken pieces onto skewers, leaving a little space between each piece for even cooking.

  4. Preheat the Grill: Preheat your grill or grill pan to medium-high heat. Lightly oil the grates to prevent sticking.

  5. Grill the Skewers: Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally. Brush with the reserved mango habanero sauce while grilling for extra flavor. Cook until the chicken is fully cooked and slightly charred on the edges.

  6. Serve: Remove from the grill and let rest for a couple of minutes. Garnish with fresh cilantro and serve with lime wedges or a fresh salad.
