Heat olive oil in a large pot
Sauté diced yellow onion and jalapeños until softened
Add minced garlic and cook until fragrant
Brown the ground beef, breaking it up as it cooks
Stir in tomato paste and cook for 1-2 minutes
Add beer (if using) and let simmer briefly
Pour in beef broth, tomato sauce, and fire-roasted diced tomatoes
Add Hatch chiles (if using)
Stir in all spices: chili powder, chipotle chili powder, cumin, smoked paprika, dried oregano, garlic powder, onion powder, cayenne, black pepper, and bay leaves
Add rinsed and drained pinto beans and kidney beans
Stir in Dijon mustard, Worcestershire sauce, and balsamic vinegar (if using)
Add dark chocolate (if using) for depth
Simmer on low heat for 30-45 minutes, stirring occasionally
Finish with lime juice and adjust salt and pepper to taste
Remove bay leaves before serving
