Classic Beef Chili
  1. Heat olive oil in a large pot

  2. Sauté diced yellow onion and jalapeños until softened

  3. Add minced garlic and cook until fragrant

  4. Brown the ground beef, breaking it up as it cooks

  5. Stir in tomato paste and cook for 1-2 minutes

  6. Add beer (if using) and let simmer briefly

  7. Pour in beef broth, tomato sauce, and fire-roasted diced tomatoes

  8. Add Hatch chiles (if using)

  9. Stir in all spices: chili powder, chipotle chili powder, cumin, smoked paprika, dried oregano, garlic powder, onion powder, cayenne, black pepper, and bay leaves

  10. Add rinsed and drained pinto beans and kidney beans

  11. Stir in Dijon mustard, Worcestershire sauce, and balsamic vinegar (if using)

  12. Add dark chocolate (if using) for depth

  13. Simmer on low heat for 30-45 minutes, stirring occasionally

  14. Finish with lime juice and adjust salt and pepper to taste

  15. Remove bay leaves before serving
