Season ground beef with salt, black pepper, onion powder, garlic powder, and Worcestershire and mix until fully combined.
Form into a tight compact meat log and place on a parchment-lined sheet pan.
Spread chopped onions and chopped peppers on the same pan next to the meat log.
Bake at 425°F (220°C) for 30 minutes.
Remove from oven, slice the meat paper-thin, and mix with the roasted peppers and onions on the sheet pan.
Broil for 3–5 minutes until the meat edges crisp and the peppers/onions caramelize.
Add provolone over the meat mixture and melt it in the oven.
Optional cheese wiz: simmer heavy cream and American cheese until smooth and pourable.
Load meat into toasted rolls and pour cheese wiz over the top if using.
