Prepare ingredients: dice onion, cube ginger, mince garlic, and slice chilli
Cook jasmine rice according to package directions
In a large pan or wok, sauté onion, ginger, garlic, and chilli until fragrant
Add green curry paste and stir to combine
Pour in coconut milk and chicken stock
Bring to a simmer and add prawns
Add red pepper and sugar snaps
Cook until prawns are cooked through (approximately 5-7 minutes)
Stir in fish sauce and spinach until wilted
Finish with a generous squeeze of fresh lime juice
Serve over jasmine rice
