15 Minute Coconut Green Curry
  1. Prepare ingredients: dice onion, cube ginger, mince garlic, and slice chilli

  2. Cook jasmine rice according to package directions

  3. In a large pan or wok, sauté onion, ginger, garlic, and chilli until fragrant

  4. Add green curry paste and stir to combine

  5. Pour in coconut milk and chicken stock

  6. Bring to a simmer and add prawns

  7. Add red pepper and sugar snaps

  8. Cook until prawns are cooked through (approximately 5-7 minutes)

  9. Stir in fish sauce and spinach until wilted

  10. Finish with a generous squeeze of fresh lime juice

  11. Serve over jasmine rice
