Santa Fe Chicken
  1. Preheat oven to 400F (205C). Toss chicken thighs with seasoning.

  2. Sear chicken thighs on all sides.

  3. In a casserole, mix yellow rice packet with water and oil as listed on the package. Add canned black beans and mix together. Top with seared chicken. Top with salsa.

  4. Cover with foil and bake covered for 30 minutes, then uncovered for 5–10 minutes until it's not soupy but not dried out.

  5. Sprinkle with shredded cheese and return it to the oven until the cheese melts.

  6. Dot with sour cream and serve.
