Chili Diet
  1. In a large pot of dutch oven, brown the ground beef and break it up.

  2. Dice onion, mince garlic, add to the ground beef once the beef is partially browned.

  3. Cook on high, stirring often, until the beef is browned and the onion is soft.

  4. Add the cumin, oregano, chili powder, garlic powder, onion powder, coriander powder and stir for a few minutes.

  5. Add chipotle in adobo sauce and tomato paste and stir for a few minutes.

  6. Add crushed tomatoes and chicken stock.

  7. Drain beans into sink and add to pot (omit if making diet version).

  8. Add bay leaves and simmer covered for 30 minutes.

  9. Turn off heat and add fish sauce, hot sauce, and apple cider vinegar.
