Instant Pot Corned Beef
  1. Place 2.5 cups of water in your 6qt instant pot

  2. Cut corned beef into two smaller pieces and then wash off your corned beef with water

  3. Place meat rack on top of the water, then place corned beef on meat rack in your Instant Pot

  4. Use the seasoning packet that comes with your corned beef to sprinkle all over the corned beef and in between the two pieces

  5. Pour the lager over the corned beef

  6. Add pickling spice on top

  7. Seal your instant pot and cook at high pressure for 90 minutes

  8. Let your Instant Pot do a natural release for 20 minutes, and then do a manual release

  9. Remove corned beef from Instant Pot, let cool a little, cut against the grain, and serve

  10. Add the vegetables to the corned beef liquid. I like to keep the baby potatoes whole, and I cut the carrots and cabbage into large chunks so that they do not get too mushy.

  11. Cook for 4 minutes high pressure, followed by a quick release. Serve with your corned beef.
