One-pan Creamy Chicken And Pepper Gnocchi
  1. Heat the oven to 400°F (190°C).

  2. In a large casserole pan, combine the pepper, chicken, leeks or onion, gnocchi, garlic, lemon (if using), olive oil, fennel, garlic powder, paprika and a hefty pinch of salt and pepper. Stir until combined.

  3. Place the shallots on top. Place the casserole dish in the oven and bake for 25 to 30 minutes, until crispy bits develop on top. Cover with aluminum if anything browns too quickly.

  4. Make the sauce: blend together the roasted shallots, garlic cloves, roasted peppers and coconut milk. Season with salt to taste. Pour over the baked casserole and stir to combine. Adjust with more seasoning as needed.

  5. Serve with parsley on top.
