Rice Chocolate Mousse
  1. Melt the dark chocolate using a double broiler or the microwave.

  2. In a blender, combine the leftover rice, hot water, vanilla and chocolate, and blend until smooth.

  3. Pour the mixture into two dessert cups, and refrigerate for at least two hours until thickened.

  4. Once it has thickened, dust with cocoa powder, as desired.
