Pumpkin Bread
  1. Preheat oven to 350°F. Grease a 9x5 inch loaf pan.

  2. In a large bowl, whisk together the pumpkin, eggs, sugar, oil, and water until well combined.

  3. In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg.

  4. Fold the dry ingredients into the wet ingredients just until combined, being careful not to overmix.

  5. Pour the batter into the prepared loaf pan.

  6. Bake for 55-65 minutes, until a toothpick inserted in the center comes out clean.

  7. Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
