In large bowl add gelatin and pour in boiling water.
Stir until dissolved, around two minutes.
Whisk in Greek yogurt until well combined.
Pour cold water and give a slight stir. Transfer to 8 individual serving dish (approximately 6 oz each) or a medium serving bowl.
Cover and chill until fully set, approximately 4 hours or overnight.
Before serving, top with whipped cream and strawberries for garnish, if desired.
Cover and refrigerate any leftovers for up to 5 days.
