Wash and halve the baby potatoes.
Thinly slice the onion and mince the garlic.
Place potatoes in the slow cooker.
Layer the onions on top, then sprinkle garlic, salt, pepper, and thyme.
Dot the butter pieces evenly over the potatoes.
Pour in the broth, if using.
Cover and cook on low for 4–5 hours or high for 2–3 hours, until potatoes are tender when pierced with a fork.
Taste and adjust seasoning if needed.
Garnish with fresh parsley before serving.
