Stir well to fully dissolve the yeast and sugar
Mix the bread flour and salt into a dough
Knead the dough with your hands, just form the dough without kneading
Let it rest for about 20 minutes
Flatten the dough and knead the unsalted butter into it
Round up the dough, cover and let it rest for about 20 minutes
Flatten the dough, sprinkle with flour to prevent sticking, and roll into a large rectangular dough sheet
Spread the surface with butter
Fold the dough sheet in thirds and press it to expel the air inside
Roll out the folded dough sheet larger and spread with butter
Roll up the dough sheet from one side and roll it into a cylinder
Divide into two parts and cut each portion into smaller pieces
Put the dough pieces in the mold, cover and let rise for about 60 minutes
Spread the top with egg wash or milk
Bake at 170°C (340°F) for 22 minutes
