MAKE THE STICKY PORK Place the pork in a large frying pan over high heat. Cook, stirring occasionally, for 7 minutes or until well browned. Add the maple syrup, sweet soy sauce, fish sauce, vinegar and chilli, if using. Bring to boil. Reduce heat to medium. Stir in 60ml (¼ cup) water. Simmer, stirring occasionally, for 2 minutes or until the sauce thickens enough to coat the pork. Remove from heat.
COOK THE NOODLES Meanwhile, place noodles in a large saucepan of boiling water. Cook for 2 minutes or until just tender. Drain and refresh under cold running water.
SERVE THE SALAD Combine the noodles, leaves, carrot, coriander and mint on a platter. Top with some pork. Serve with peanuts and remaining pork on the side.
