Preheat the oven at 400°.
Let puff pastry thaw on the counter while you cook the onion.
Add diced onion to a pan with a few tbsp butter.
Cook on medium heat until it's translucent and browned. Take off heat and let cool.
Cut Brie into bite sized pieces.
Next on a parchment lined sheet open up the puff pastry like a book. Cut each sheet into 9 even squares. Next cut the shape of a square into the tops of each one.
Top with 2 tbsp of fig jam followed by one small chunk of brie.
Top with caramelized onions and a tsp of bacon bits.
Next make the egg wash by combining 1 egg with 1 tbsp water. Brush the sides of the puff pastery squares.
Next sprinkle with dried thyme and salt.
Bake at 400 degrees for 20 minutes!
