Butterfly Shrimp Chips
  1. Prepare the rice paper by cutting it into quarters using kitchen shears

  2. Lay a piece of (dried) rice paper flat. Position a flattened shrimp in the center and the tail on the end. Pound and flatten the shrimp on top of the rice paper until very thin. Season with salt and pepper

  3. Repeat with the rest of the shrimp and rice paper

  4. In a Medium pot, heat the oil to 375°F. Drop shrimp chip carefully and cook for about 1-2 mins until shrimp turns pink. Remove from heat and let rest or wire rack or sheet tray lined with paper towels

  5. Serve with Chili Ranch and Devour!
