Butter Chicken Mac N' Cheese
  1. Sauté 2 onions until browned

  2. Dice 900g chicken breast

  3. In slow cooker, combine diced chicken, browned onions, 30g tomato paste, 30g garlic paste, 15g ginger paste, 30g butter, 400g blended fire-roasted tomatoes, and 15g sugar

  4. Add spice blend: 2 Tbsp paprika, 1 Tbsp chili powder, 1 Tbsp spicy curry powder, 2 tsp cumin, 1 Tbsp salt, and dash of black pepper

  5. Cook on High for 2-3 hours OR on Low for 3-4 hours

  6. Cook 672g shell pasta to 50% of box time

  7. Mix 400g Greek yogurt and 120g cream cheese together

  8. Combine cooked pasta with slow cooker chicken mixture

  9. Stir in yogurt and cream cheese mixture with 1 cup pasta water

  10. Add 227g extra sharp cheddar and 80g reduced fat mozzarella

  11. Sprinkle with 1 tsp garam masala

  12. Garnish with chopped cilantro and green onions

  13. Divide into 10 servings for meal prep
