Add all ingredients (flour, yeast, salt, water) and stir together really well until lump free for about a minute
Add olive oil to a rectangle dish and pour the dough in, cover and leave for 30 mins
Stretch and fold with damp hands until it tightens and becomes more homogeneous, cover and rest for 30 mins
With wet hands, lift up and fold over in coils about 7-8 times, rest for 30 mins
Repeat the coils with wet hands (will be tighter now), do about 4-5 coils, rest for 30 mins
Do a couple more coils, cover and rest for 30 mins
Heavily flour the dough and surface, turn out and cut into 4 pieces with a scraper or knife, place carefully onto parchment paper and leave for 30 mins
Heat oven to max 240°C fan with a heavy duty baking sheet inside
Slip the bread onto the hot tray, add water to the oven for steam and bake for 15 mins
Open the oven to release steam, reduce heat to 200°C fan and place bread on higher shelf to crisp up for 5-8 mins until fully cooked and crispy
Let cool for 10-15 mins then slice and butter
