Preheat oven to 220°C, then turn it down to 200°C when you put the tray in the oven for 25-30 mins, but check check check EVERY OVEN IS DIFFERENT
Roll out the puff pastry and spread the Dijon mustard over it
Sprinkle the grated cheddar cheese and freshly ground pepper over the pastry
Lay the bacon slices over the cheese
Roll up the pastry tightly and cut into 12 equal pieces
Place the pieces on a baking tray, brush with the egg wash
Sprinkle the brown sugar and fresh thyme over the top
Bake for 25-30 minutes until golden brown
