Preheat your oven to 375°F (190°C). Grease an 8x8-inch baking dish or line it with parchment paper.
Roll out half the crescent roll dough and press it into the bottom of the baking dish to form an even layer.
Evenly layer the corned beef slices, sauerkraut, and 1 ½ cups of Swiss cheese on top of the dough. Drizzle with Thousand Island dressing.
Roll out the remaining crescent roll dough and place it over the top. Pinch the edges to seal. Brush the dough with beaten egg and sprinkle with caraway seeds, if desired.
Bake for 25-30 minutes, or until the crust is golden brown.
Remove the dish from the oven and sprinkle the remaining ½ cup of Swiss cheese on top. Return to the oven for 5 minutes or until the cheese is melted.
Let the bake cool slightly before slicing into squares.
