Add all of the ingredients to a high speed blender and blender until smooth and creamy. taste the mixture and add more sweetener or spices if desired (adding cinnamon is delicious!).
Pour the ice cream mixture into a loaf pan and place in the freezer until frozen, or overnight.
Once frozen, scoop and serve! you'll want to let the ice cream sit out and soften for about 5-10 minutes before scooping. store leftovers in the freezer.
