Monster Cookie Protein Bites

Peanut-butter oat bites with enough chocolate and candy to taste like a snack. No matter the flavor of protein bites I make for the week, these are always a family favorite with my kids.

  1. Combine the oats, peanut butter, honey, protein powder, M&M’s, chocolate chips, vanilla and salt in a large bowl.

  2. Stir until the mixture is evenly combined. If it remains dry and crumbly after a full minute of mixing, add applesauce 1 tablespoon at a time. The mixture should hold together when squeezed without feeling wet.

  3. Chill for 20 minutes, then portion with an ice cream scoop and roll into balls.

  4. Refrigerate until firm before transferring to a covered container. If you forget to cover them, they will dry out and everyone in your house will complain.

MAKE AHEAD Refrigerate up to 1 week or freeze up to 2 months, but they will not last that long. Separate layers with parchment if stacking.
