Preheat your oven to 425℉.
Prepare two baking sheets with parchment paper or a baking mat.
Add the olive oil, cumin, paprika, salt, and any other spices you'd like to add to a large bowl and whisk to combine.
Add the cauliflower and onions and blend well with a spatula or tongs.
Spread the cauliflower blend across the baking sheets and bake for 30 minutes or until the cauliflower is fork-tender. Toss the cauliflower about halfway through to ensure even coating and roasting.
Serve warm. Store leftovers in the refrigerator for a few days.
