Preheat the oven to 420F / 220C
On a baking pan with parchment paper put the sliced cabbage
Add the seasoning and mix it well with your hands
Spread the cabbage evenly on the baking sheet
Bake it in the oven on 420F for 25 minutes
Transfer to convection broil on 450F for 7-8 minutes until the cabbage is golden and crisp
Put all the dressing ingredients in a small food processor and process to a smooth dressing
Put the roasted cabbage in a nice bowl
Pour the dressing on top and garnish with sumac
