Spanish Chicken
  1. Preheat the oven to 190 °C, 375 °F, Gas 5. Slash each chicken piece and place in a non-metallic dish. Add the paprika, olive oil, lemon juice and garlic. Season well, mix and leave to marinate for 1 hour.

  2. Place the chicken and the marinade with the onions, peppers, thyme and olives in a shallow ovenproof dish. Mix well so that everything is coated in the marinade and bake for 40-45 minutes.

  3. Serve with rice, fettuccine or a simple fresh green salad and chunky bread.
