Preheat the oven to 350°F.
Place an oven-safe pan over medium heat. Add 1 tbsp olive oil, then add the shredded sweet potato, sliced onion, diced red pepper, and sliced green onion. Sauté for 6 minutes, stirring occasionally.
In a blender, add the cottage cheese, egg whites, eggs, shredded cheddar or mozzarella, salt, and pepper. Blend until smooth.
Pour the blended egg mixture over the sautéed vegetables in the pan. Allow it to cook over medium-high heat for 4–5 minutes.
Transfer the pan to the oven and bake for 40 minutes.
