Add vegetable blend and cook, stirring occasionally, until softened, about 5 minutes. Add garlic paste, cajun seasoning, oregano, smoked paprika, and salt; cook, stirring constantly, until fragrant, about 1 minute.
Add beans and chicken stock, and bring to a boil over high. Reduce heat to medium-high and cook, stirring and scraping bottom of pot occasionally, until slightly thickened, about 10 minutes. Remove from heat and stir in vinegar. Serve immediately over rice.
