2-ingredient Coconut Banana Cookies
  1. Preheat oven to 175°C / 350°F and line a tray.

  2. Mash bananas until smooth.

  3. Add shredded coconut and mix into a thick dough.

  4. Scoop 1 tbsp portions onto the tray.

  5. Flatten slightly (they won’t spread).

  6. Bake 15–20 minutes until edges are golden.

  7. Cool completely to firm up.
