Tzatziki
  1. Grate the cucumber

  2. Add salt and 1 tbsp vinegar

  3. Let it sit 20 to 30 minutes

  4. Squeeze out all the liquid

  5. Add to yogurt

  6. Mix in garlic, remaining vinegar, olive oil, dill

  7. Season and chill

  8. Serve cold. Drizzle with olive oil.

  9. Add a sprig of thyme and an olive if you like. Optional.
