Coconut Lime Chicken With Rice

  1. In a bowl, combine coconut milk, lime juice, lime zest, minced garlic, soy sauce, ginger (if using), salt, and pepper.

  2. Add the chicken to the mixture and let it marinate for at least 30 minutes (or overnight for extra flavor).

  3. Heat olive oil in a skillet over medium heat.

  4. Remove the chicken from the marinade and cook for 5-7 minutes per side, until golden brown and cooked through. Set aside.

  5. While the chicken cooks, prepare the rice according to the package instructions. Fluff with a fork when done.

  6. In the same skillet, pour the remaining marinade and bring it to a simmer.

  7. Let it cook for 5 minutes, stirring occasionally, until it thickens slightly.

  8. Serve the chicken over the rice.

  9. Drizzle with the coconut lime sauce and garnish with fresh cilantro and lime wedges.
